How can i prevent that a user books the same time slot at the same date with the same practitioner but a different service?
Time slots are double booked when somebody makes an appointment with the same staff but different service.

Could you please share the link to your frontend booking form? Did you test from the WP Admin? Administrator is given the privilege to add appointments on any time. However the time slot should not be available to customers in frontend booking form once it is booked.
